Sweet and Savory Mascarpone Toasts

Mascarpone is one of the main ingredients in our newest cake, Tiramisu Mille Crêpes (read more about the cake here). Mascarpone is essentially an Italian cream cheese, but more whipped and lighter with a tang. It is divine.


Though we usually see mascarpone mentioned when it comes to tiramisu, mascarpone is a versatile cheese that can be used in many ways. This month, we have two recipes that show how we can use mascarpone in sweet and savory dishes for a simple lunch/snack. Both of these toasts (one with smoked salmon and dill, another with strawberries and honey) take 5-minutes to prepare, taste wonderful, and look quite fancy. It's a win-win-win.
Ingredients
- 2 slices bread (cut into quarters or rounds)
- 4 ounces, mascarpone
- 1/4 pound, smoked salmon
- 1 bunch, fresh dill
- 1 pint strawberries
- 1 tablespoon honey
Savory (Smoked Salmon and Dill)
- Toast the bread till lightly golden.
- Apply a thick layer of mascarpone and top with a few sprigs of dill.
- Ribbon the smoked salmon nicely over the top (use more or less depending on personal preference).
- Put a dollop of mascarpone over the smoked salmon and top with springs of dill (use the dollop of mascarpone as the anchor that hold the dill).
Sweet (Strawberries and Honey)
- Toast the bread till lightly golden.
- Apply a layer of mascarpone over one side.
- Top with sliced strawberries.
- Drizzle a bit of honey on top.
