New Year, New Cake...aka Passion Fruit Cheesecake!

We launched the very beautiful Passion Fruit Cheesecake in all US boutiques (and online) on January 1, 2019. Sweet, tart, and sunny all around, this cake embodies our well wishes and dreams for 2019.
A lot of work goes into every new cake we create here at Lady M. You'll notice that we don't launch new flavors often, and when we do, it's a task we take with great passion and responsibility. From brainstorming with our dream team of chefs, to recipe testing, and sourcing the best quality ingredients available, we spare no detail with cake creation.
The Passion Fruit Cheesecake is a marriage of fresh passion fruit purée blended with hand-whipped mascarpone cheese and cream cheese. It makes for a very lush cheesecake. Mascarpone is the same type of sweet Italian cheese you'll find in tiramisu, it's soft, creamy and has a deliciously high butterfat content. (We also love dipping peak season strawberries in whipped mascarpone, but that's a story for another day.)
As for the crust, we went with the classic graham cookie, but with an extra twist. Call it the Lady M touch. What's that other note you taste? It's coconut! So subtle yet ever present. We fold delicate coconut flakes into the crushed graham cookies and then finish the cake with a dusting of snow sugar. Passion Fruit Cheesecake joins Passion Fruit Mille Crêpes as the second passion fruit cake in the family.
Also, have you noticed how nicely passion fruit and coconut go together? Reminds of us Hawaii!
