We are on a serious green tea kick. We love Japanese sencha green tea, served hot or over ice on a warm summer day. We love matcha, rich and pure. And we really love matcha green tea lattes. Green Tea Checkers Cake - This is the green tea version of our classic Checkers Cake. We are quite meticulous about getting perfect alternating square of green tea and chocolate sponge cake. The little details matter most. We make sure each of the squares are separated with a brush of fresh whipped cream. The whole cake gets a coat of cream and pour of green tea-white chocolate ganache. We love presenting the whole cake and cutting it open right at the dinner table. It's guaranteed to score you many ooohs and aaahs.

Green Tea Mousse Cake - A longtime favorite and Lady M classic. Just pure goodness featuring green tea in three forms. First the sponge cake, then the green tea whipped cream, and then dustings of green tea over the entire cake surface. This is elegant and posh, a must for any green tea lover.
